Mamposteao Rice
With Jamonilla® and Vegetables
Arroz Mamposteao, or Mamposteao Rice, is a traditional Puerto Rican dish with rice and beans. Every Puerto Rican kitchen has its own version, but they all have rice and pink or red beans in common. What varies is the ratios of onions, bell peppers, garlic, tomatoes, and, in some cases, ham and chorizo.
In this version, we use onion, green bell pepper, Jamonilla®, cilantro, garlic, and rice and beans. This meal is a satisfying way to turn leftovers into a wholesome meal. The Jamonilla® makes preparation short and sweet as it only demands some simple chopping.

Tips
If you don’t have any leftover rice start by cooking the rice according to the cooking instructions on the package – preferably a couple of hours before making the mamposteao rice.
Add a can of diced tomatoes or tomato puree to make the Mamposteao rice come nicely together. If you want an even more flavorful dish, simply add spices such as cumin, paprika, oregano, chili powder, onion powder, or garlic powder.
